HIC's 10" X 6" roasting rack allows one to roast their poultry or meat without touching the bottom of the pan. This is critical to roasting as this type of cooking refers to dry heat. Without using a roast pan, the poultry or meat would boil in its own juices. Using a roasting rack is also a healthy way to prepare roasts as it allows the fat to drip off the poultry and meat and rest under the rack. Small size is perfect for use in smaller pans.
